Mix sauce ingredients. Heat sauce and set aside.
Lightly dust chicken with flour and sauté until golden.
Baste chicken with glaze and sprinkle with pecans.
Garnish with chopped parsley.
Apple Brown Betty Serves 6
2 ¼ cups bread crumbs or graham cracker crumbs
3 T. melted butter
4 medium-sized apples, cored and sliced
1 T. lemon juice
½ tsp. grated lemon rind
½ cup brown sugar
⅓ cup hot water
Combine crumbs and butter, stir over low heat until lightly browned. Place one-third in a greased baking dish.
Arrange half the apple slices in a layer over the crumbs. Sprinkle with half the lemon juice, rind, and sugar.
Add second layer of one-third of the crumbs and remaining apples, lemon juice, rind, and sugar.
Cover with remaining one-third of the crumbs. Pour water over.
Bake in 375-degree oven until apples are tender (30-40 minutes). Serve warm with sauce of your choice or with vanilla ice cream.
